We source our milk directly from the dairy farmer. We pay a premium and have a full time employee managing the flow of Grade A milk directly from the dairy farm to our cheese plant. This insures that our supply is fresh, wholesome, and always available. We do not use brokers like the majority of our competitors.

We are a U.S.D.A. approved plant.

We are approved to use the American Dairy Association's "Real" seal and the California Milk Advisory Board's "California Real Seal". We proudly display the seals on our packaging.

In addition to the California chemistry spec's for mozzarella, we have strict microbiological spec's we follow for every order that leaves our plant.

We produce all our product to order so we can meet the customers spec's and give optimum age with each and every order.

We keep a sample of each vat of cheese we produce for the life of the cheese, so if there ever is a problem, we have a sample of the cheese in our lab to judge for a quick answer to a problem.

Our plant management team checks every pallet of cheese prior to leaving our dock to assure firmness of product.

We operate a "state of the art" facility, erected in the mid 1980's which we expanded during 2000 to allow us to continue to grow now and into the future.
